摘  要
大成盛记”餐饮管理发展有限公司主要以直营加连锁授权经营为主要经营模式。本文对大成盛记餐饮管理发展有限公司的经营模式的盈利能力进行分析,采用定性分析以定量分析作为主要研究方法。以数据拟合和线性回归作为分析手段。在理论研究方面,以餐饮连锁、加盟经营以及持续发展的理论基础作为本文的理论依据,在实证研究方面,通过对大成盛记每一家店面和每个店面的销售营业收入实地调研统计,以及对大成盛记每年新开与升级的门店数量进行统计,进行了数据分析的相关研究;对大成盛记餐饮管理发展有限公司早餐发展现状进行分析,对其在战略转型、顾客体和消费价格方面的盈利能力,并从店面数量和顾客单价因素两个方面对影响企业盈利能力进行细致分析。

但是随着我国国际化程度的日益加深,越来越多国际上的著名餐饮连锁企业进入到中国市场。这些企业又凭借着领先于我国的管理理念以及资金上的优势,在我国一、二线城市站稳了脚跟,从而对我国本土的餐饮企业产生了严重的冲击,尤其是一些管理制度基础差的餐饮企业,因此对我国本土的餐饮企业带来了一定的影响。但同时因为国际上的餐饮企业不清楚我国人民的饮食习惯,不了解每个地区人民对饮食要求的差异性,这也给我国本土的餐饮企业带来了机遇与挑战。因此一大批优秀的本土餐饮企业在国际餐饮企业的冲击下生存壮大,并且吸收国外餐饮企业的优秀的管理制度与连锁经营的模式,形成了具有中国特的连锁餐饮业叮当猫全集[1]
