Black pudding hash with fried egg  血肠杂烩配煎蛋
You could use Spam instead of black pudding for this simple one-pan fry-up. For a vegetarian version use vegan black pudding (sic), which is made with compressed beetroot and is very tasty.
你可以用午餐肉代替血肠来做这道简单的一锅煎。素食主义者可以用素血肠,它由甜菜根压缩制成,非常美味。

Ingredients  食材
l 400g potatoes, diced into small cubes  400克土豆,切成小块
l 2 tbsp vegetable oil, plus extra for the eggs  2汤匙植物油,外加煎蛋用的油

1. Blanch the potatoes in boiling salted water for about 4 min, then drain. Heat the oil in a nonstick frying pan, add the potatoes and fry until they start to brown (after about 5 min).
2. Add the onion and chilli, if using, stir and cook until soft. Season generously. Add the black pudding. Mix it all up and fry for 5 min until the black pudding starts to become crispy. While this is happening, fry the eggs. You could also poach them, but why corrupt the entirely fried nature of this healthy breakfast item?
3. Mix the parsley into the hash and dollop between four warmed plates. Serve topped with an egg.

烤箱做的简单美食食谱Lancashire hotpot  兰开夏郡炖锅
This is a much posher hotpot than any I ate as a student. For a more low-rent version, use chopped-up lamb’s kidney instead of the lamb, or Spam. I wouldn’t, though.

l 12 lamb cutlets  12块羊排

1. Heat the oven to 170℃ (190℃ non-fan). Put a large lidded casserole in the oven to heat up. Meanwhile, add the oil to a large frying pan and fry the cutlets on both sides to brown them off a bit. You might need to do this in stages depending on the size of your pan. Remove from the pan with a slotted spoon and set aside.
2. Now soften the onions in the same pan, but not too much — 4-5 min should be enough. Don’t let them brown. Take the hot casserole from the oven and chuck the lamb and onions into it. Stir in a couple of teaspoons of flour if you want a thicker sauce, and add the stock. Add the thyme leaves and a bit o’ seasoning. Put the lid on this lot and shove it back in the oven for about 30 min.
3. Remove the casserole from the oven. Stir in the sliced carrots. Now layer the sliced potatoes over the top so that they overlap attractively and cover the whole area. Put the lid back on and stick it back in the oven for an hour.
4. Take it back out of the oven. Turn the oven up to 210℃ (230℃ non-fan). Dot the butter over the top of the potato layer, then put it back in the oven, without the lid on, for another
30 min, or until the potatoes are crisp and golden. Serve and talk about trouble at t’mill.

Cottage pie  农家馅饼
It’s quite difficult to mess this up. There is huge latitude in the ingredients and cooking technique for this potato-topped pie, and so long as you come out with something meaty and juicy with potato on top, you can claim success. This is a cottage pie, because it’s made with beef.
A shepherd’s pie is exactly the same, but with lamb. I’ve also tried making a vegetarian version with Quorn vegetarian mince. It tasted like reconstituted social services jobs pages from The Guardian.
